Batata vada recipe 

one of my favorite Indian street food dishes 
easy to make tasty and vegan gluten-free 

for the filling:
4 large potatoes - cooked with the pill on until soft Drain from the water wait for it to cool, peel and mash into a puree

for paste:
4-5 garlic cloves
green chili as taste 
1 inch of ginger 
1 cup of fresh coriander leaves
2-3 tbsp water
ground the paste ingredients   in a spice grinder and set aside  

3 tbsp vegetable oil 
2 teaspoons mustard seeds
1/2 teaspoon turmeric
1/4 teaspoon chili powder 
Some curry leaves (dried or fresh)
Salt to taste

Heat the oil in a pan,
Add the mustard seeds and curry leaves and stir. Add the mashed potatoes and the green spice mixture you prepared in advance
Add the turmeric, chili, and salt
And mix everything with 1-2 tablespoons of water
Close the pan and give it a few minutes
After a few minutes of heating, the filling is ready
Let it cool

Then make patties from the potato mixture.

For coating:
2 cup gram flour
1/2 tsp  of turmeric, 
½ teaspoon red chili powder, 
½ teaspoon baking soda,
 Salt to taste, 
 water  as required
Mix the gram flour and spices in a bowl and add water gradually until you get a paste that is not too thin and not too thick.
Set aside for ten minutes

The final step:
  Deep frying
Dip each patty in the mixture of the gram flour
And gently slide it into a non-stick pot with deep, hot oil
When golden on both sides
Remove
And that's it. Ready, tasty and you can not stop eating it.
It can be served with chutney or any other dip
